Basic - - From initial inspection : Basic - Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Observed reach-in cooler across from sandwich make station unable to maintain temperature of 41F and below. Ambient temperature 55F. Observed ice buildup on interior top and also torn gasket on same reach-in cooler. Operator stated cooler was working fine before lunch. Warning - From follow-up inspection 2026-05-15: At callback ambient temperature of reach-in cooler 47F. Operator stated person has not arrived to service cooler yet. No TCS foods stored in reach-in cooler across from steam table. Time Extended

Employee stated he had lid opened during lunch. Operator discussed to keep lid closed for food to chill. Also, corned beef hash, sliced American cheese, sliced white cheddar cheese, cooked beef, cooked sausage patties (50F-53F - Cold Holding) in two door reach-in cooler across from flip top reach-in cooler at sandwich make station. Operator stated cooler was working fine earlier. Operator called to have cooler serviced during this inspection. Corrective Action Taken Warning
