6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple potentially hazardous foods* located in prep-cooler and in under-counter cabinet that are on the same circulation unit not being held at 41 degrees or below. CA: PIC informed me that a work order has been placed and were waiting for service. Food items in the pre-cooler were placed in the unit around 8:30am and under-counter cabinet storing hashbrown boxes with a prep date of 2-18-2026 (and were left there overnight) and waffle batter dated 2-18-2026. COS: PIC instructed to discard all items in the under-counter cabinet cold-hold unit due to items being in unit for more than 2 hours and items in prep-cooler were time-marked for 4-hour use. Mechanic came during inspection to service unit. Email service invoice once completed.

Back door needs weather stripping on left side due to gap/light being seen.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Plates not inverted/protected from contamination while being stored above wash machine/bar area.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Prep-cooler and cold-holding unit under counter not holding food temps to 41 degrees. Service invoice must be submitted and completed.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Dirty pans in bottom drawer under grill area.
