Observed raw shrimp and salmon stored above RTE shredded lamb and beef in front under counter grill;raw breaded chicken tenders stored above RTE bread and RTE fries in bottom prep-cooler on line. CA: PIC instructed to re-arrange food items due to them being covered in both units and PIC was given instructional material regarding storage order/cooking temps to properly handle potentially hazardous food items.COS: PIC rearranged food items.
