6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed shredded chicken prepared day prior cold holding at 56F. Advised PIC that cold TCS foods must be held at 41F or below. PIC stated that food likely rose when placed in close proximity to previously-cooling foods. All other temps within walking cooler within regulation. PIC discarded chicken.
