6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed tcs foods (dairy and eggs) stored in a reach in cooler in excess of 41F. Advised PIC that TCS foods must be cold held at 41F or below. PIC discarded all TCS foods within the cooler, due to out-of-range ambient temperature.
