Observed cigarette on the shelf in the food prep area of the main kitchen. CA, employees shall not have tobacco in or evidence of tobacco use in food prep/food service areas. COS, PIC discarded the cigarette.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed several pans, lids and bowls that were said to be clean with old food stuck to them in the main kitchen. CA, all cookware and dishes shall be clean and free of accumulations. COS, PIC removed the pans, lids and bowls and placed them in the sink to be cleaned.
