Observed potentially hazardous food(rice) not held at 135 degrees Fahrenheit or above at steam table and hot hold area at grill. Product was discarded by PIC. Grill observed to not be on, discussed if holding rice 135 F or above must be maintained.

Observed food being cooled by nonapproved method. Salsa being cooled in walk-in cooler in 5 gallon buckets. CA: Salsa not over 4 hour cooling parameter to reach 41 degrees. Salsa was moved to walk-in freezer for rapid cooling. Ensure salsa reaches 41 degrees when preparing. Train employees to use a thermometer when mixing salsa.
