Observed some black mold/mildew on the back wall of the large ice machine in front food-service area. Recommended placing ice machine on a regular cleaning schedule to avoid buildup of mold and mildew and to avoid possible contamination of drinks.

Observed scoop left lying in the lettuce in the salad prep cooler. Utensils shall be properly stored between uses, in a clean and sanitized area in order to avoid contamination of food.

Observed heavy grease build-up and accumulation on the grease trap in the back of the kitchen area with utensils shelved on the top portion of the grease trap. Recommend putting this piece of equipment on a cleaning schedule and also recommend storage of equipment and utensils in a different area to avoid possible contamination.

Observed trash on the ground all around the outside dumpsters. Garbage area shall be kept free of trash accumulations on the ground around the dumpsters in order to prevent possible attraction of rodents and insects.

Observed dust buildup on light covers and ceilings in main kitchen area. Kitchen ceilings shall be kept free of dust and dirt accumulations to avoid possible contamination of food products.

Observed chicken bites stored uncovered in the "true" reach-in freezer beside the fryers. Made CFSM aware of this and it was corrected. All food products shall be stored covered.

Observed black mold on the walls of the main ice machine in front area walkway leading to the kitchen area. Ice machine shall be placed on a regular cleaning schedule to prevent buildup of mold and/or mildew. Shared this information with CFSM and recommended a cleaning schedule.

Observed bagged, frozen chicken being thawed in standing water in the 3 compartment sink area. TCS foods, if thawed submerged, shall be thawed "submerged under RUNNING water at a water temperature of 70 degrees fahrenheit or below", and for a period of time that does not allow thawed portions of a raw animal food requiring cooking to be above 41 degrees fahrenheit. Chicken was still frozen (had only been in water a few minutes), so the chicken was moved to the walk-in cooler to complete thawing. Recommended to CFSM that chicken be moved to walk-in cooler to thaw the night before use.

Observed that there was no inspection report posted and CFSM stated he was "instructed by management to take it down." Previous inspection report SHALL be posted in PUBLIC view.

Observed cutting knife stored on the cutting board with handle touching between uses. All utensils shall be stored in a storage container or in food item with handle above the food. Discussed with CFSM and he stated he "will share with employees and correct."

Observed outside of flour storage container that was badly soiled with flour stuck to it that appeared to have been there several days. Storage containers shall be cleaned on a regular basis to avoid the possibility of contaminating food items. Discussed with CFSM a cleaning schedule for all such items.

Observed accumulations of dust and residue on the ceilings and ceiling vents in the main kitchen. These areas shall be cleaned regularly to avoid possibly contaminating food (dust and debris can fall from ceiling and cause contamination). Discussed this with CFSM also.
