4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed 3 compartment sink with sanitizer reading "zero" strength for the chemical measuring strips the facility has on hand. The facility uses Sanitizer with Lactic Acid, and has strips in facility but sanitizer sink measures "zero". Employee stated sanitizer dispenser has not been working correctly. Observed no sanitizer buckets on hand for wiping surfaces throughout facility. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label and shall be used at proper strength. PIC states she will get with owner and Chemical technician to solve the problem immediately.

Observed boxes stored on floor in facility and in Walk In Cooler. Food must be stored at least 6" off floor at all times. PIC corrected this during time of inspection.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employees working with and preparing drinks without hair restraints. All employees working with food/equipment in kitchen must wear proper hair restraints/beard restraints (hat, visor or hair net). PIC will ensure employees adhere to this.
