Observed raw chicken wings at 56 degrees fahrenheit and raw chicken breasts at 58 degrees fahrenheit in the chicken prep cooler. CFSM will place ice underneath chicken pans to help control temperature until cooler is repaired. CFSM contacted maintenance company at time of inspection. Time/Temperature Control for Safety food shall be maintained at 41 degrees fahrenheit or below (except DURING preparation, cooking, or cooling, or when TIME is used as a public health control).
