Observed several stainless steel pans with black mold spots in need of good scrubbing and sanitizing. CFSM placed pans in 3 compartment sink and will have all pans deep cleaned and scrubbed down or stated he may discard and buy new pans.

Observed raw chicken wings at 56 degrees fahrenheit and raw chicken breasts at 58 degrees fahrenheit in the chicken prep cooler. CFSM will place ice underneath chicken pans to help control temperature until cooler is repaired. CFSM contacted maintenance company at time of inspection. Time/Temperature Control for Safety food shall be maintained at 41 degrees fahrenheit or below (except DURING preparation, cooking, or cooling, or when TIME is used as a public health control).

Observed food product containers that were not clean (dust, dirt, food debris, etc.). CFSM stated he would have food products switched into clean containers and these containers would be cleaned today. Non-food contact surfaces shall be clean to sight and touch and free of accumulations of dust, dirt, food debris, etc.
