6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Items in the WIC such as beef tips, sliced tomatoes, raw hamburger patties were not labeled with a prep date or discard date. PIC was shown and is getting a system that will work for them. Staff will be trained in the system.
