6-1A: .04(6)(f)Observed a container of tomatoes, shredded lettuce, wrap lettuce, and hot dogs cold holding above 41F in the prep cooler located across the fryer. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: PIC(person in charge) adjusted the temperature of the prep cooler. Prep cooler held ambient air of 28.5F. As per discussion, the container of tomatoes contained sliced tomatoes that were left in the prep cooler overnight and sliced tomatoes that come from the walk-in-cooler and placed in the container this morning. Food employee discarded the sliced tomatoes that was stored overnight in the prep cooler, and placed the sliced tomatoes that came from the walk-in-cooler back into the walk-in-cooler. The shredded lettuce was discarded. The wrap lettuce and the hot dogs were removed to the walk-in-cooler.
