If used, single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. The PIC could not provide a written procedure with the minimum requirements. The PIC was provided with a time control template. Ensure reportable diseases includes both types of salmonella (nontyphoidal and typhoidal). PIC discussed tender prep procedure. Tenders are reaching 56F when prepped during the slurry step; consider using ice water instead of "cold" water from the tap. Informal inspection is required. Fee will apply.
