Facility no longer does key drop deliveries. Per PIC, Panera bread has a uniform policy where employees are allowed to wear a minimum of one bracelet while handling foods. Ensure that food employees are not wearing any hand and wrist jewelry. Violation will be marked accordingly on next routine inspection. Fees will be charged accordingly for any violation which cannot be corrected on-site during inspection. Repeat violations may result in permit suspension. Per PIC, food employee washed the strawberries and placed them back in the original container. Observed the same food employee wash a container of strawberries at the 3 compartment sink. Raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only, to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form. (Pf) Corrective Actions: After both observations, strawberries were washed at the vegetable sink.

Observed pooled eggs in the ice bath cold holding above 41F. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: PIC (person in charge) removed the boiled eggs to the walk-in-cooler and added more ice to the pooled eggs ice bath. PIC discarded the milk and half and half.
