3-1C - food in good condition, safe, and unadulterated
Regulation: 511-6-1.04(1) - safe, unadulterated and honestly presented (p)
Observed items in prep top cooler (tomatoes, lettuce) and walk in cooler (sweet potatoes, tomatoes, apples, butter) covered in a mold like substance. These items were discarded by PIC.
4-1A - food separated and protected
Regulation: 511-6-1.04(4)(j) - food contact with equipment & utensils, and linens (p)
Observed multiple items stored on the floor of the walk in freezer (chicken, fries, etc) PIC discarded these items and rearranged the freezer to create more space.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(o) - manual warewashing equipment, chemical sanitization using detergent sanitizers(c)
Sanitizer not present in the warewashing machine. Hypochlorite solution was clear instead of the typical yellow. Bottle was replaced and machine was primed but the machine still did not reach the proper sanitation level. Contact a service technician to address the machine. Use available 3 compartment sink for proper sanitization of dishes until this unit can be repaired.
