Observed the cook at the grill placing a new flat of raw eggs next to the grill for faster access. The cook did not time stamp the flat for safety tracking. When checked later with PIC, the PIC stated the process is to write the time on the flat when it comes out of the cooler. The cook missed a step and was reminded by PIC and EH staff about the time marking.
