Observed employee dip hands in sanitizer bucket that contained sanitizer. With gloved hands and was about to go work with ready to eat hot dog buns. Corrected staff asked him to discard and wash hands and put new gloves on. He did correct on site.

Observed staff just pulling chicken strips and drop them in hot hold unit- chicken strips temped a 121°F; staff told me they needed to be 165°F and redropped them in fryer. When pulled from fryer the second time chicken strips temped at 207°F. Also observed hamburger patties from raw state drop finished "cooking" at 137, 146, 148, 150. Flame broiler needed to reset so that hamburger patties reached proper cook temp at 155°F or above.
