Observed a tray of mac n cheese not hot held 135°F or above on steam table in main kitchen (see temp log). PIC stated the unit had been giving them trouble and that they would get maintenance to check it.
CA: TCS foods shall be maintained at 41°F or below or 135°F or above.
COS: PIC reheated mac n cheese to 165°F and above as the food had been in unit for under the time parameters for reheating.
