Observed containers of marinated raw meats being stored on same shelf as a container of chopped lettuce in RIC. Raw meats shall be stored below ready to eat foods to prevent contamination. COS. Items were rearranged for proper storage.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed several heavily stained plastic containers stored with clean dishes. All food contact surfaces including storage containers shall be cleaned and sanitized after each use or discarded if they are unable to be cleaned. COS. Containers were discarded.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed food being thawed in prep sink without water flowing over it. All frozen foods shall be thawed using an approved thawing method.
