6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed coleslaw in prep cooler holding at a temperature greater than 41F. Coleslaw in plastic container and not full submerged in pan in prep cooler. CA: TCS foods cold held must hold at 41F or below. COS: PIC indicated coleslaw had been in unit some days and did not know how long product may have been out of temperature. Coleslaw discarded.
