The following items stored within the cold-top prep cooler measured above 41F for over 4 hours: small pan of diced tomatoes (46F), small bin of sausage (45F), full bin of ham (44F), and small bin of sliced cheese (45F). All items discarded, follow-up on cooler required.

The sanitizing solution location at the 3-compartment sink measured 0ppm, quaternary ammonia. The inspector noted that dishes were actively being washed at the time of measurement. The inspector demonstrated how to properly mix and test sanitizing solution.

Several flies were observed around the rear exit door. The inspector discussed various fly mitigation techniques with the manager on duty.

A hose with a spray nozzle was attached downstream from the mop sink atmospheric vacuum breaker (AVB) when not in use. The spray nozzle creates continuous pressure on the AVB disabling its required function. The manager on duty removed the spray nozzle.
