Per the cook the bacon was cooked and placed on top of the oven for cooling approximately 1.5 hours prior to measurement. A pan of cooked sausage patties stored within the 2-door stand-up cooler measured 60F-70F. Per the manager on duty, the sausage was removed from hot holding and placed in the cooler for cooling approximately 3 hours prior to measurement. The inspector noted that the pan was tightly covered at the time of measurement.
