12A - contamination prevented during food preparation, storage, display

Observed the cook handle raw chicken with gloved hands and place it into a container for breading. During removal of the chicken, raw chicken juices splattered onto the prep-top cooler surface used for ready-to-eat food preparation. The employee was instructed to clean and sanitize the affected surface prior to preparing ready-to-eat foods.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Test strips were not available at the time of inspection. The inspector observed a soapy sanitizer bucket and the cook stated it contained soap and bleach. When tested by the inspector, the sanitizer solution did not register a concentration on the test strip. The CFSM prepared a new sanitizer solution, and the inspector provided several sanitizer test strips.
