6-1A - proper cold holding temperatures
Observed 3 bottles of egg mix stored at room temperature in the main kitchen area next to the conventional oven. The temperature was 69°F. CA: time/temperature control for safety food (TCS) shall be 41°F or below for cold holing. COS: all concerned bottles were discarded
4-2B - food-contact surfaces: cleaned & sanitized

Observed green stains all around the inner surface of both ice chute of the drink machine located in the dining area. Also, observed exposed rust on the upper surface in the ice machine located in the main kitchen. Corrective action (CA): All food contact surface shall be cleaned and sanitized frequently to prevent stain, buildup accumulation of moldlike substance and inspect frequently to ensure units are in good repair so rust is exposed and may contaminated food. Person in charge was informed that ice machine shall be cleaned and service by 12/10/2025
