12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed low concentration of sanitizer in the wiping cloth buckets located in the griddle area. The concentration was below 100ppm. CA: ensure the sanitizer concentration is between 150ppm and 400ppm. COS: Wiping cloth sanitizer buckets were replaced during the inspection.
12D - washing fruits and vegetables
Regulation: 511-6-1.04(4)(g) - washing fruits & vegetables (pf)
Observed containers and tea bucket stored in the vegetables/produce sink and on the drained board. Ensure vegetable sink is only used for vegetable and fruit.
