6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed dairy - Half and half- stored at room temperature in the front service coffee station and gravy. The temperature of the dairy was 49°F and the temperature of the gravy was 69°F. corrective action (CA): all time temperature control for safety (TCS) shall be maintain at 41°f OR below for cold holding. COS: all concerned dairy and gravy were discarded.
