6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several items stored in the prep top cooler (make table) and 2-door reach-in cooler not maintained at 41°F or below as required. the range of temperatures was 43°F to 48°F. CA: time/temperature control for safety foods (TCS)shall be held/maintained at 41°F or below for cold holding. COS: All concerned foods were discarded. Time as a public control was used as a corrective action for items-tomatoes, lettuce, cheese- Held until 12:00 PM
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed chicken and burger meat stored in the front service 4-door reach-in cooler. Corrective action: food shall be covered or resealed properly unless they are actively cooling. COS all concerned foods were covered/ resealed.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed ice bins in front of the service and ice machine in the main kitchen with black mold-like substance. CA: All food contact surfaces must be cleaned and sanitized frequently to prevent mold-like substance accumulation. Ice bins must be empty and cleaned, and the ice machine as well, by 09/23/2025
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
The 2-door reach-in cooler shall be serviced since the ambient temperature is 50°F and cannot be used to hold TCS and RTE foods.
