I OBSERVED THE FACILTY REHEATING CHILI INSIDE THE WARMER UNIT @ 10:20 AM WITH A TEMP OF 100F. AT 10:30 108F. PIC STATED THEY USUALLY PUT THE CHILI INSIDE THE MICROWAVE BEFORE PLACING INSIDE THE HOT HOLDING UNIT. SERVICE STARTS AT 10:30 ;PIC REHEATED CHILI INSIDE MICROWAVE
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
I OBSERVED EXCESSIVE GREASE BUILDUP DRIPPING AROUND THE FRYER AREA, NEAR THE FIRE SUPPRESSION.
