Observed food (chicken) stored uncovered in walk-in cooler. CA: Ensure al food is stored covered.
18 - insects, rodents, and animals not present
Observed light fly activity in main kitchen area. Backdoor screen in disrepair and large gaps around door frame. CA: Maintain door to prevent fly/pest entering facility.

Observed non-food contact surfaces in main kitchen with heavy food debris accumulation. CA: Clean non-food contact surfaces often enough to prevent build up.

Observed physical facilities throughout in a general state of disorganization and debris accumulation on floor in high traffic areas. CA: Assign designated areas for items. Store in a cool, dry place 6" off floor. Clean often enough to prevent debris accumulation.

Observed employee personal use items on food prep surface in main kitchen (drink in glass, no lid). Also observed heavy grease build up in hood vents. CA: Keep employee drinks in single use cups, with lid, off of food prep surfaces. Clean hood vents often enough to prevent grease build up.
