Observed two bins of utensils and one knife on a magnetic block stored with food debris. Observed several utensils stored on classroom carts in the hallway outside the kitchen for future lunch service. CA: utensils must be stored in a manner that prevents their contamination. COS: all utensils and storage bins rewashed.

Observed ready-to-use utensils with physical and food debris and stored in containers with food and physical debris on bottom. Observed ready to use utensils stored on push carts in the hallway outside the kitchen not protected from contamination. CA: All ready-to-use utensils must be washed, rinsed, and sanitized prior to storage and must be stored in a way that prevents contamination. COS utensils and containers re-sanitized. Proper storage discussed.

Observed the pressure gauge on the mechanical dishmachine to be fluctuating throughout multiple wash and rinse cycles. The gauge read briefly within the acceptable 5-30psi range but did not maintain pressure throughout the cycle. The gauge appeared to show a resting pressure of over 700kPa/100psi when machine not in use. Machine had work order in at last inspection, manager put in additional work order.

Observed the two cutting boards in the kitchen to be deeply etched, discolored, and shedding pieces of plastic. Cutting surfaces must be kept in good condition and easily cleanable to ensure the integrity of the food items cut on them. COS cutting boards voluntarily discarded and new ones will be ordered immediately.

Observed ready-to-use utensils with dried food debris and stored in containers with food and physical debris on bottom. All ready-to-use utensils must be washed, rinsed, and sanitized prior to storage and must be stored in a way that prevents contamination. COS utensils and containers re-sanitized.

Observed the dumpster enclosure with a broken gate. The gate must be repaired to help prevent large pest incursion and unauthorized access to the dumpster. Staff were notified and will place work order for repair. Observed a landscaping rake and a pallet stored within the dumpster enclosure as well as vegetation growth within the enclosure. These items must be disposed of or stored elsewhere and the vegetation must be landscaped to prevent pest harborage within the dumpster enclosure.

Observed the dumpster missing a drain plug. A drain plug must be installed to prevent pest incursion into the dumpster and prevent liquid waste from spilling from the dumpster when it is moved and emptied. Staff were notified and will have the refuse removal company replace the drain plug.
