Observed facility without proper sanitizer. Staff informed Inspector that Fabuloso cleaner was used to clean and sanitize for food prep and contact surfaces. Staff were informed that Fabuloso was not an appropriate sanitizer for food contact surfaces and may not be the last chemical to touch these surfaces as it does not contain the appropriate concentration of any approved sanitizer. COS staff ceased use of Fabuloso on food contact surfaces and will utilize commercial disinfectant with chlorine as a sanitizer for food contact surfaces.

Observed sour cream packets cold held in the reach-in-cooler that had expiration dates of May, July, and September 2023. COS Staff informed items were held past expiration and were voluntarily discarded. Staff and Inspector discussed implementing routine inventory checks for all food items in kitchen.

Staff informed food items must be labelled with manufacturing expiration when delivered from Trio to ensure proper disposition of the food items are maintained.
