4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed that QUAT sanitizer in spray bottle and 3-compartment sink was below 200 ppm upon arrival. Facility informed and sanitizer remade to 300 ppm.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
observed that cooling items had been stored tightly covered and stacked. Facility informed of proper cooling methods and items moved to cool rapidly in reach-in-freezer.
14D - gloves used properly
Regulation: 511-6-1.04(4)(n)2,3,4 - gloves, use limitations, slash resistant gloves & cloth gloves (c)
Observed employee touching equipment handles with gloved hands and then preparing to handle food. COS employee informed of proper glove use, gloves changed and hands washed before food handling occurred.
