Observed raw chicken above raw fish in two different reach in coolers and walk in cooler in facility. COS, PIC separated foods in an approved manner to prevent contamination to foods in facility.
6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed 4 large containers of fried chicken stored on bottom shelf of prep table in cook area at 86F to be reheated in fryer. COS, chicken was discarded by PIC.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed wood on freezer floor used as a barrier to original floor. Wood shall be sealed appropriately or removed from premises. CTM, facility shall fix violation noted and send documentation to the Lowndes county health department within 10 days from this date. 3/13/26.
