6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
-Observed boiled eggs, raw shrimp, and container of sausage on counter top not being properly cold held -CA- Food shall be stored in RIC to keep food 41F or below. -COS- Food was out for 30 minutes and was placed back into the RIC as a corrective action.
