Observed deep pan of nacho cheese with lid stored in walk-in cooler at 45F. This was dated 5/1/24. Employees stated that this was leftover from yesterday. Corrected on-site by discarding. Discussed leaving items uncovered while they cool, stiring food to even out temperature, employing other rapid cooling methods such as ice baths, dividing foods into smaller portions.

Observed "Anytimers" brand pizza kits stored on cart at ambient temperature. Observed temperature of 63F. Product contains cheese and pepperoni type product. Packaging indicates that they should be kept refrigerated until served. Corrected onsite by moving to pass thru cooler. Facility will discard any remaining "Anytimers" pizza kits at the end of lunch service.
