Temperatures were not observed to decrease in the units fast enough to place items on serving line to be held on time. These items were moved to walk-in cooler. It is recommended to use walk-in cooler to ensure these items cool completely.

Observed no concentration of sanitizer in prepared sanitizer solution in the sanitizing compartment of the 4-compartment dish sink. When the sanitizer dispenser was examined, Sunburst Chemicals Solid Green 28 Biological Floor Cleaner container was observed to be in the dispenser. This was removed, the dispenser was rinsed out and the and the correct sanitizer was placed in the dispenser.

All items washed and sanitized today were re-washed and sanitized.
