Observed waste water from 3 compartment sink back flow out of floor drain when two compartments were drained at one time. Drains appeared to be free flowing when water when both faucets were turned on. A single compartment was filled and drain with no back-up. Facility should contact a licensed plumber to ensure drain line in floor slab is clear.
EH will follow-up next week.

Observed employees using meat and vegetable prep sinks to pre-rinse wares/utensils. Discussed placing a sign above the sinks to show their designated use for example "meat/fish only" and "fruits/vegetables only".

Observed squeeze bottles of ranch dressing with no date markings in reach-in cooler. Ranch is house made. Observed opened containers of commercially made potato salad, macaroni salad, and cole slaw with no date markings. Observed container of cut melons and container of tartar sauce with no date markings in reach-in cooler.
Any commercially prepared TCS foods held in the facility for more than 24 hrs after they are opened must be date marked and discarded within 7 days of opening container.
Any ready to eat TCS foods made in the facility should be date marked with the date it is prepared and may only be kept for 7 days.

Observed sanitizer solutions in rag buckets and 3-compartment sink exceeding 200ppm of chlorine. Corrected on site by draining sanitizer solutuions and refilling at the appropriate concentrations.

Observed wet wiping cloth stored on prep table. Wet wiping cloths should be stored in sanitizer solution between uses. solution should be at least 50 but no more than 200ppm chlorine.

Observed residue build up on inside of spigot on tea urns. These should be washed, rinsed, and sanitized daily.
Observed no concentration of sanitizer in rag buckets used for wiping down table tops between customers. Employee stated that they use Mr. Clean. Observed Mr. Clean bottle does not say that it is a sanitizer or disinfectant. While Mr. Clean is acceptable to clean tables, it should not take the place of sanitizing tables.

except for specified items refrigerated, ready-to-eat, time/temperature control for safety food prepared and packaged by a food processing plant shall be clearly marked, at the time the original container is opened in a food service establishment and if the food is held for more than 24 hours, to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days after the original container is opened. If this ham was removed from the original removed on 5/11 it should have been discarded by 5/17. Employees stated that the ham was from monday 5/15 and was mislabeled.
