6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed raw chicken, potatoes, corn, shell eggs, tilapia and fried fish being stored above 41F. COS: All items discarded. CA: Items being maintained by refrigeration must be held at 41F or below.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed lemon slices inside of handwash sink. Per conversation with PIC the waitress sometimes dump drinks in it. COS: Employee cleaned all evidence of lemon slices and leaves. CA: A handwashing facility may not be used for purposes other than handwashing.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed multiple items stored in reach in cooler not covered. Observed large container of sauce stored on the floor with no cover. COS: Employee observed inspector looking in cooler and began to cover items with plastic wrap. CA: Food shall be stored covered to protect from overhead contamination.
12A - contamination prevented during food preparation, storage, display

Observed box of corn and bulk sauces being stored on the floor of the facility. CA: All food shall be stored a minimum of 6 inches above the floor.
