While inspecting the walk-in cooler, I observed raw shell eggs stored next to cartons of milk and whole tomatoes. Additionally, observed raw T-bone steaks stored next to fully cooked beef chuck eye roll steaks. COS: PIC rearranged WIC so that separation issues were resolved. CA: Food shall be protected from cross contamination by separating raw foods away from ready to eat foods.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed bucket with wiping cloth stored next to bulk syrup container and individual syrup containers. When inquiring as to what was held in the bucket the staff was unsure. The PIC stated he thinks it may be water. Due to the staff being unsure the inspector checked the bucket and determined that it was sanitizer testing above 200ppm. COS: PIC emptied the contents in the bucket. CA: Poisonous or toxic materials shall be stored so that they can not contaminate food.
