Observed raw chicken stored above raw shell eggs in walk in cooler. Food shall be protected from cross contamination by arranging each type of food in equipment so that cross contamination of one type with another is prevented. COS: PIC rearranged food items in coolers by cook temp.
12C - wiping cloths: properly used and stored

Observed wet wiping cloth in kitchen area stored on prep surface. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: PIC placed wet wiping cloth in sanitizer bucket.
