Observed raw chicken thawing above raw eggs, lemons, and pre-cooked meat balls in walk in cooler. Observed raw eggs above lemons and pre-cooked meat balls in walk in cooler. Food shall be protected from cross contamination by arranging each type of food in equipment so that cross contamination of one type with another is prevented. COS: PIC rearranged cooler based on cook temp.

Observed stack of stainless steel pans stacked while wet on drying rack. Utensils and items shall be allowed to completely air dry before stacking. COS: PIC separated pans.
