6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed RTE and raw chicken being stored above 41F. PIC used the facilities thermometer and also verified that the items were out of temp. COS: Items discarded. CA: Food that is being cold held shall be maintained at 41F or below.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed toxic chemicals being stored above frying oil. COS: PIC moved stainless steel cleaner and degreaser to the ware wash area. CA: Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils and single-service and single-use articles.
