6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Hamburgers hot holding at the steam table didn't temp.131°F and 133°F.
CA: TCS food shall be maintained at 135°F or above.
COS: The hamburger at 131 deg f was discarded, and the hamburgers at 133 deg f were reheated to 180 during inspection.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Build up of black residue on the inside of the ice machine. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: During the inspection the ice machine was cleaned.
