Coleslaw and salad had a temperature above 41 deg f. The food is under TPHC, not temp. The facility didn't have documentation of time or temp of when they came out of cold holding. When using TPHC the food shall have an initial temperature of 41 deg f or less when removed from cold holding; cos: moved back into cooler to finish cooling, salads and coleslaw had just been prepped. Coleslaw finished cooling during inspection. Time and temp written down.
