6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Two gallons of milk (48 and 46 deg f) cold holding in reach in cooler in back room. Hot dogs in front sandwich cooler cold holding at 50 deg f. Ca: All tcs items cold holding shall be maintained at 41 deg f or below. Cos: Discarded during inspection. All food moved from sandwiches in front to back cooler. PIC to check temperature every two hours. New front cooler on its way to facility.
6-2 - proper date marking and disposition

Mozzarella cheese and several packs of deli meat not date marked. Ca: All food that requires datemarking shall be discarded if it does not have a date mark. Cos: Discarded during inspection. Pic was not sure when it was opened.
