Observed Sweet potatoes sitting on service line in individual cups, sitting away from the hot hold area of the line. Sweet potatoes temped at 96, 94 degrees and in the hot hold stand up unit they were 122 degrees. COS Reheats all sweet potatoes up to 167 degrees. after completeing inspection PIC then goes to inform me about using Time as control for food items. However, The procedure had not been reviewed by Health Department, it was not done correctly nor was the label system in place on the food products using time as control.

Cooling process from prepping salad to serve salad is not occurring. Observed staff prepping and then directly start to put on Cold hold serving line. I discussed with CFSM that once a salad is prepped how it needs to cool back down to 41 degrees or below, prior to service. COS she placed all prepped salads on roll cart and placed them in freezer to cool prior to service.
