5-1B - proper reheating procedures for hot holding
Regulation: 511-6-1.04(5)(h) - reheating for hot holding (p)
observed steam table hot holding unit being used to reheat bbq hash. cos-hash placed in bowl and microwaved to proper temperature and then placed in hot holding unit to maintain >135 degrees F.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
observed can opener blade encrusted with food debris cos-removed and cleaned. observed wash rags sitting on tables cos-placed in sanitizer sink.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(o) - prohibiting animals (pf)
observed cardboard stored on floor as a flooring material and observed several flies in the kitchen. CA-remove cardboard as a potential pest harborer and keep doors closed and seal gaps to prevent fly intrusion.
15C - nonfood-contact surfaces clean

observed sugar spilled on top of canned food items. ca-clean thoroughly.
