No paper towels stocked at kitchen hand sinks. CA: PIC instructed to ensure hand sinks are stocked with paper towels. PIC restocked paper towels. COS.

Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Chlorine sanitizer in dish machine less than 50ppm. CA: PIC instructed to ensure chlorine sanitizer is maintained at 50-100ppm. PIC made sanitizer to proper concentration in three compartment sink. COS.

Observed mold growth/debris build up on splash plate of ice machine. CA: PIC instructed to ensure ice machine cleaned often enough to prevent mold growth/debris build up.

Dish machine currently incapable of sanitizing dished with proper chemical concentration. PIC set up sanitize compartment of 3-compartment sink. PIC instructed to call technician to adjust unit.
