Observed multiple items in walk-in cooler (time/temperature control for safety (TCS) ready-to-eat (RTE)) without 7-day discard date. Corrective Action (CA): Person in Charge (PIC) instructed to ensure all RTE TCS items held longer than 24 hours are properly dated. PIC labeled items. COS.
