Observed customer plates not store inverted on expo line shelf. Observed clean food pans tightly stacked while wet on clean dish shelf next to three compartment sink. Allow to fully air dry prior to tightly stacking.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Observed employee phone store on pasta prep table, ensure appropriate employee storage areas used. Employee removed phone. COS.
